Ciorbă de Carnețe (Romanian Meatball Soup)

Ingredients
  

  • 1.5 liters Water
  • 500 grams Beef or pork, cut into small cubes
  • 2 medium Onions, chopped
  • 2 large Carrots, sliced
  • 1 parsnip Parsnip, sliced
  • 200 grams Tomato paste
  • 1 cup Cabbage, shredded
  • 1 cup Green beans, chopped
  • 1 cup Potatoes, diced
  • 1 tbsp Dried savory (cimbrul) Or 1 tbsp dried thyme and 1/2 tsp dried oregano
  • 1 tsp Salt To taste
  • 1/2 tsp Black pepper To taste
  • 2 tbsp Vegetable oil
  • 1/4 cup Fresh parsley, chopped For garnish
  • 1/4 cup Fresh lovage, chopped Or celery leaves

Instructions
 

  • In a large pot, heat the oil and brown the meat cubes. Remove the meat and set aside.
  • Add the chopped onions and sauté until translucent. Add the sliced carrots and parsnip and cook for another 5 minutes.
  • Stir in the tomato paste and cook for 2 minutes.
  • Return the meat to the pot. Add the water, salt, and savory. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Add the shredded cabbage, chopped green beans, and diced potatoes. Continue to simmer for another 15-20 minutes, or until the vegetables are tender.
  • Stir in the chopped parsley and lovage. Taste and adjust seasoning as needed.
  • Serve hot.
