Ingredients
  

  • 1 tablespoon butter
  • 2 tablespoons olive oil
  • 1 medium yellow onion diced
  • 3 cloves garlic finely chopped
  • 1 package smoked sausage such as kielbasa (I used Eckrich), sliced into 1/4-inch rounds
  • 4 cups kale leaves torn
  • 1 sprig fresh rosemary
  • 1/2 teaspoon dried thyme
  • 3 cups potatoes cubed
  • 1 carton low-sodium fat-free chicken broth 32-ounces
  • 2 cups soy milk I used Silk Soymilk
  • to taste salt and pepper

Instructions
 

  • In a large pot or Dutch oven, melt butter and olive oil over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for 1 minute more.
  • Add smoked sausage and cook until lightly browned.
  • Add potatoes, chicken broth, rosemary, and thyme. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  • Stir in kale and soy milk. Cook until kale is wilted, about 5 minutes.
  • Season with salt and pepper to taste.
