Mama’s Tortellini Soup with Homemade Butter
Ingredients
- 6 links Sweet Italian Sausage
- 4 links German Sausage
- 2 cloves Garlic, chopped
- 1/2 medium Onion, chopped
- 2 T Olive Oil
- 2 cans Beef Broth
- 2 cans Water
- 1 can Diced Tomatoes, drained
- 1 tsp Italian Seasoning
- 1 cup Diced Carrots (optional)
- 1 cup Sliced Zucchini
- 1 can Kidney Beans (optional)
- 1 package Tortellini
- 1/2 cup Sliced Black Olives
- to taste Grated Parmesan Cheese
- 1/2 cup Butter (for garlic bread)
Instructions
- In a large saucepan, heat oil on medium heat and brown sausage links whole.
- Add garlic and onion. After onion is tender and sausage are cooked, drain grease and slice sausage.
- In the saucepan, add beef broth, water, sliced sausage, garlic/onion mixture, tomatoes, Italian seasoning, carrots, zucchini and beans. Let simmer for 20 minutes.
- 10 minutes before serving, add tortellini and olives. Cook until tortellini are tender, about 8-10 minutes.
