Butternut Squash and Black Beans

Ingredients
  

  • 1 medium Butternut Squash Cooked and cubed (4 cups)
  • 1 tsp Coconut Oil
  • 1 cup Sweet Onion Diced
  • 1 red pepper Red Pepper Chopped
  • 2 cloves Garlic Minced
  • 2 tsp Cumin
  • 1/4 tsp Red Pepper Flakes
  • 1 can Black Beans Rinsed and drained
  • to taste Salt
  • to taste Pepper

Instructions
 

  • To cook butternut squash quickly just cut in half and remove seeds.
  • Place face down on a microwavable dish and place in microwave for 8 minutes. Flip over, cover with wax paper and cook an additional 8 minutes. Remove and allow to cool. Once cooled, cut with a knife to obtain cubes of squash.
  • Heat coconut oil in skillet and add onion, pepper and garlic. Cook for about 5 minutes or until onions are translucent. Add spices and cook 1 more minute.
  • Add beans and squash to mixture.
