To cook butternut squash quickly just cut in half and remove seeds.
Place face down on a microwavable dish and place in microwave for 8 minutes. Flip over, cover with wax paper and cook an additional 8 minutes. Remove and allow to cool. Once cooled, cut with a knife to obtain cubes of squash.
Heat coconut oil in skillet and add onion, pepper and garlic. Cook for about 5 minutes or until onions are translucent. Add spices and cook 1 more minute.
