Ingredients
  

  • 2 tbsp Olive Oil
  • 1 onion Yellow Onion Diced
  • 2 cloves Garlic Minced
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1/2 tsp Smoked Paprika
  • 28 oz Crushed Tomatoes
  • 15 oz Black Beans Rinsed and drained
  • 15 oz Kidney Beans Rinsed and drained
  • 1 cup Vegetable Broth
  • 1/2 cup Corn Frozen or fresh
  • 1/4 cup Cilantro Chopped, for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic, cumin, chili powder, and smoked paprika and cook for 1 minute more.
  • Stir in crushed tomatoes, black beans, kidney beans, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Stir in corn and simmer for 5 minutes more.
  • Serve hot, garnished with cilantro.
