Beefy Tomato Soup

Ingredients
  

  • 1 lb ground beef
  • 28 oz crushed tomatoes
  • 1 onion onion, chopped
  • 2 carrots carrots, chopped
  • 2 celery stalks celery stalks, chopped
  • 4 cups beef broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp garlic powder
  • salt to taste salt
  • pepper to taste pepper

Instructions
 

  • Brown the ground beef in a large pot or Dutch oven. Drain off any excess grease.
  • Add the chopped onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes.
  • Stir in the crushed tomatoes, beef broth, oregano, basil, garlic powder, salt, and pepper.
  • Bring the soup to a boil, then reduce heat and simmer for at least 30 minutes, or up to an hour, to allow the flavors to meld.
  • Serve hot.
