Instructions
Melt butter in a large Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
Whisk in flour and cook for 1 minute, stirring constantly.
Gradually whisk in chicken broth and beer until smooth.
Bring to a simmer and cook for 10 minutes, stirring occasionally.
Reduce heat to low and whisk in cream cheese until melted and smooth.
Stir in cheddar cheese until melted and smooth.
Season with salt and pepper to taste.
Garnish with chopped parsley and serve immediately.
