Beer Cheese Soup

Ingredients
  

  • 4 tablespoons butter
  • 1/2 cup onion, chopped
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup light beer
  • 8 ounces cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
  • 2 tablespoons chopped fresh parsley for garnish

Instructions
 

  • Melt butter in a large Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  • Whisk in flour and cook for 1 minute, stirring constantly.
  • Gradually whisk in chicken broth and beer until smooth.
  • Bring to a simmer and cook for 10 minutes, stirring occasionally.
  • Reduce heat to low and whisk in cream cheese until melted and smooth.
  • Stir in cheddar cheese until melted and smooth.
  • Season with salt and pepper to taste.
  • Garnish with chopped parsley and serve immediately.
