Instructions
In a large pot, melt butter over medium heat. Add carrots, onion, and celery and cook until softened, about 5-7 minutes.
Whisk in flour and cook for 1 minute.
Gradually whisk in milk and water until smooth. Bring to a simmer, stirring constantly.
Reduce heat to low and simmer for 10-15 minutes, stirring occasionally.
Stir in cheese, Worcestershire sauce, hot sauce, salt, pepper, and Dijon mustard. Cook until cheese is melted and smooth.
Use an immersion blender or transfer to a regular blender to blend until smooth.
Serve hot.
