Roma tomatoes

chicken broth

diced tomatoes

fresh basil

almond milk
or coconut milk, or 1/2 and 1/2, or heavy cream

shredded mozzarella
Instructions
Preheat oven to 400 degrees.
Toss tomatoes generously with olive oil, pepper, and salt.
Place in oven and bake about 40-50 minutes, or until the tomatoes start to blister.
Add chicken broth, diced tomatoes, garlic, onion powder, and basil to the baked tomatoes.
Bring to a simmer and cook for 10 minutes.
Stir in almond milk and mozzarella cheese until melted.
Serve hot.
