Black Bean Soup

Ingredients
  

  • 3 cans Black Beans un-drained
  • 1 can Chicken or Vegetable Broth
  • 1 16 oz jar Salsa of your choice
  • 2 Tbsp Lime Juice
  • 1/2 c Sour Cream
  • 1 Tbsp Cumin
  • Red Pepper optional

Instructions
 

  • Place 2 cans of black beans and 1 can of chicken broth in blender, and blend until smooth.
  • Pour mixture into slow cooker and add last can of black beans into the mixture.
  • Add your jar of salsa, 1/2 cup sour cream, and 2 Tbsp. lime juice and mix in.
  • Add in your cumin and optional red pepper.
  • Stir, put lid on, and cook on low for 8 hours (preferred) or high for 4 hours. The longer you cook the more flavor and spiciness comes out.
