Broccoli and Cheese Soup

Ingredients
  

  • 3 cups broccoli florets
  • 2 cups shredded cheddar cheese
  • 1 large carrot, cut
  • 2 cups half & half
  • 2 cups chicken or vegetable broth
  • 1/2 stick butter
  • 1/2 cup onion, chopped
  • 2-3 cloves garlic, minced
  • 4 tablespoons flour
  • 1/4 teaspoon paprika
  • 1/4 teaspoon nutmeg
  • to taste salt and pepper

Instructions
 

  • Cook the onion in a large pot over medium heat.
  • Add in the garlic and saute for about one minute.
  • Add the flour and whisk until it's a golden brown color.
  • Stir in the carrots, broccoli, broth, nutmeg, and paprika.
  • Bring the mixture to a boil and then reduce the heat. Let it simmer for 15 minutes.
  • Stir in the cheese and the half and half.
  • Simmer for another 2 minutes.
  • Add salt and pepper if needed.
  • Serve and enjoy!
