Broccoli Cheese Soup

Ingredients
  

  • 2 Tbsp olive oil (or butter)
  • 1 cup onion, chopped (about 1 medium onion)
  • 1 cup carrots, sliced
  • 3 cloves garlic, minced
  • 3 cups chicken (or vegetable) broth
  • 2-12 oz. packages of frozen broccoli thawed (or about 4 cups fresh broccoli, steamed)
  • 12 oz. cheddar cheese shredded (3 cups)
  • 2 cups milk I used whole
  • 1 cup plain greek yogurt I love Chobani
  • to taste salt and pepper

Instructions
 

  • In a large pot over medium heat, heat the oil.
  • Add the onion, carrots, and garlic, and cook until onions are translucent and the carrots are slightly soft.
  • Add the broth and broccoli, and cook over medium low heat for about 15 minutes, covered, until carrots and broccoli are cooked through.
  • Stir in the cheese, milk, and yogurt. Heat through, stirring until cheese is melted and smooth.
  • Season with salt and pepper to taste.
