Cabbage Chickpea Soup with Basil

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 can 15-ounce chickpeas, drained and rinsed
  • 1/2 head cabbage, shredded
  • 1/4 cup fresh basil, chopped
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste
  • 1 tablespoon pine nuts optional

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  • Add vegetable broth, chickpeas, and cabbage to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until cabbage is tender.
  • Stir in basil, salt, and pepper. Taste and adjust seasonings as needed.
  • Serve hot, garnished with pine nuts, if desired.
