Cabbage Soup with Rice

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium-small red or yellow onion peeled and chopped
  • 2 cloves garlic minced
  • 1 medium green cabbage cored and finely shredded
  • 1 cup cooked brown rice long or short grain is fine
  • 4-5 cups water or vegetable broth

Instructions
 

  • In a soup pot, heat the oil over medium heat. Add the onion and garlic and cook until very lightly browned, about 4 minutes. Add the cabbage and cook until softened, about 6 minutes.
  • Add the water or broth and cook over moderately low heat until the cabbage is tender, about 10 minutes.
  • Season with salt and pepper, stir in the rice and serve.
