Caramelized Onion Soup

Ingredients
  

  • 3 lbs Yellow Onions Thinly sliced
  • 2 tbsp Olive Oil
  • 8 cups Beef Broth
  • 1/2 cup Dry Sherry
  • 1 tsp Dried Thyme
  • 1 loaf Baguette Cut into croutons
  • 8 oz Gruyere Cheese Grated

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onions and cook, stirring occasionally, for 30-40 minutes, or until deeply caramelized.
  • Add beef broth, sherry, and thyme to the pot. Bring to a simmer and cook for 15 minutes.
  • Preheat broiler. Ladle soup into oven-safe bowls.
  • Top each bowl with croutons and grated Gruyere cheese.
  • Broil for 2-3 minutes, or until cheese is melted and bubbly.
