Instructions
Heat olive oil in a large pot over medium heat. Add onions and cook, stirring occasionally, for 30-40 minutes, or until deeply caramelized.
Add beef broth, sherry, and thyme to the pot. Bring to a simmer and cook for 15 minutes.
Preheat broiler. Ladle soup into oven-safe bowls.
Top each bowl with croutons and grated Gruyere cheese.
Broil for 2-3 minutes, or until cheese is melted and bubbly.
