Instructions
Peel and chop the carrots.
Heat the oil and butter in a large pot over medium heat.
Add the carrots and cook until softened, about 10-15 minutes.
Add the ginger, salt, and pepper. Cook for another minute.
Pour in the milk and bring to a simmer. Cook for 5 minutes.
Blend the soup until smooth.
Serve hot.
