Carrot Ginger Soup

Ingredients
  

  • 4 whole carrots
  • 1 tablespoon vegetable oil
  • 1 tablespoon butter
  • 1/2 cup milk
  • 1 teaspoon ginger grated
  • salt to taste salt
  • pepper to taste pepper

Instructions
 

  • Peel and chop the carrots.
  • Heat the oil and butter in a large pot over medium heat.
  • Add the carrots and cook until softened, about 10-15 minutes.
  • Add the ginger, salt, and pepper. Cook for another minute.
  • Pour in the milk and bring to a simmer. Cook for 5 minutes.
  • Blend the soup until smooth.
  • Serve hot.
