fresh ginger
peeled and finely chopped

coconut milk

pink salt

black pepper
Instructions
In a large pot, melt the coconut oil over medium heat.
Add the shallots and cook until softened, about 5 minutes.
Add the carrots and ginger and cook for another 5 minutes, stirring occasionally.
Pour in 6 cups of water and bring to a boil. Reduce heat and simmer for 20-25 minutes, or until the carrots are tender.
Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.
Return the soup to the pot and stir in the coconut milk and salt. Heat through.
Season with black pepper to taste.
Serve hot.
