Carrot Ginger Soup

Ingredients
  

  • 2 heaping scoops coconut oil Preferable Trader Joe’s brand
  • 4 large shallots
  • 8 medium carrots
  • 1 2 inch piece fresh ginger peeled and finely chopped
  • 1/2 cup coconut milk
  • 2 tsp pink salt
  • to taste black pepper

Instructions
 

  • In a large pot, melt the coconut oil over medium heat.
  • Add the shallots and cook until softened, about 5 minutes.
  • Add the carrots and ginger and cook for another 5 minutes, stirring occasionally.
  • Pour in 6 cups of water and bring to a boil. Reduce heat and simmer for 20-25 minutes, or until the carrots are tender.
  • Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.
  • Return the soup to the pot and stir in the coconut milk and salt. Heat through.
  • Season with black pepper to taste.
  • Serve hot.
