Instructions
Cut the cauliflower into small florets.
In a big saucepan, heat the oil. Add the spices and stir.
Toss in the chopped red onion and stir. Cook for a bit.
Add the cauliflower pieces and stir.
Pour in the vegetable stock and stir.
Leave the soup on the hob until all the vegetables are fully cooked.
Pour the soup into a blender and blitz until smooth.
Pour the soup back into the saucepan.
Pop it back on the hob. Stir and taste. Add more spices if needed.
Serve in bowls. Optionally drizzle with olive oil or sprinkle with seeds.
