Cauliflower and Pepper Soup

Ingredients
  

  • 500g g Cauliflower Fresh
  • 1 Red Onion Chopped
  • 1 spoon Oil
  • 1 tsp Dill
  • 1 tsp Paprika
  • 1 tsp Marjoram
  • 1.5 l Vegetable Stock
  • 3 spoons Pepper Paste Or Tomato Paste
  • To taste Salt
  • To taste White Pepper

Instructions
 

  • Cut the cauliflower into small florets.
  • In a big saucepan, heat the oil. Add the spices and stir.
  • Toss in the chopped red onion and stir. Cook for a bit.
  • Add the cauliflower pieces and stir.
  • Pour in the vegetable stock and stir.
  • Leave the soup on the hob until all the vegetables are fully cooked.
  • Pour the soup into a blender and blitz until smooth.
  • Pour the soup back into the saucepan.
  • Pop it back on the hob. Stir and taste. Add more spices if needed.
  • Serve in bowls. Optionally drizzle with olive oil or sprinkle with seeds.
