Instructions
Brown ground beef with 2 tbsp butter in a large pot or Dutch oven.
Drain fat and add onions, carrots, and celery; sauté until softened.
Stir in parsley and pepper.
Add chicken broth and cooked potatoes; bring to a boil, then reduce heat and simmer for 10-15 minutes.
While soup simmers, melt 6 tbsp butter in a skillet and whisk in flour to make a roux.
Whisk roux into soup and bring back to a boil for 2 minutes, then reduce heat to low.
Stir in cheddar cheese and milk until cheese is melted.
Remove from heat and stir in sour cream.
