Cheeseburger Soup

Ingredients
  

  • 1 lb ground beef
  • 1 large onion
  • 8 tbsp butter 6 tbsp for roux, 2 tbsp for browning beef
  • 1/2 cup all-purpose flour
  • 1 cup cooked potatoes
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup sour cream
  • 1 tsp dried parsley

Instructions
 

  • Brown ground beef with 2 tbsp butter in a large pot or Dutch oven.
  • Drain fat and add onions, carrots, and celery; sauté until softened.
  • Stir in parsley and pepper.
  • Add chicken broth and cooked potatoes; bring to a boil, then reduce heat and simmer for 10-15 minutes.
  • While soup simmers, melt 6 tbsp butter in a skillet and whisk in flour to make a roux.
  • Whisk roux into soup and bring back to a boil for 2 minutes, then reduce heat to low.
  • Stir in cheddar cheese and milk until cheese is melted.
  • Remove from heat and stir in sour cream.
