Cheesy Bacon Potato Soup

Ingredients
  

  • 1 tablespoon butter
  • 1/2 cup chopped onion Time saver: buy pre-chopped onion
  • 2 1/2 tablespoons all-purpose flour
  • 3 cups chopped red potato about 1 pound
  • 1 1/4 cups 1% low-fat milk
  • 3/4 cup fat-free, lower-sodium chicken broth
  • 1/2 cup water
  • 1/2 cup reduced-fat sharp cheddar cheese 2 ounces
  • 2 tablespoons chopped green onions
  • 5 slices bacon Optional, for garnish

Instructions
 

  • Melt butter in a medium saucepan over medium-high heat. Add onions and sauté for 3-4 minutes, or until tender.
  • Sprinkle in flour and cook for 1 minute, stirring constantly.
  • Add potatoes, milk, chicken broth, and water to the saucepan. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 10 minutes, or until potatoes are tender.
  • Stir in cheddar cheese and cook for 2 minutes, or until melted and smooth.
  • Garnish with chopped green onions and crumbled bacon (optional).
