Cheesy Ground Beef and Potato Soup

Ingredients
  

  • 1 lb ground beef
  • 4 medium potatoes peeled and diced
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken or beef broth
  • 1 cup milk or cream
  • 1.5 cups shredded cheddar cheese
  • 1 cup carrots diced (optional)
  • 1 cup celery chopped (optional)
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • to taste salt and pepper

Instructions
 

  • In a large pot, brown the ground beef over medium heat, breaking it into small crumbles. Drain any excess fat.
  • Add the chopped onion and minced garlic to the pot and sauté until softened (about 3-5 minutes).
  • Stir in the broth and diced potatoes. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
  • Stir in the milk or cream, followed by the shredded cheddar cheese. Stir until the cheese is melted and smooth.
  • Taste the soup and adjust the seasoning with salt, pepper, thyme, and parsley. Serve hot.
