Instructions
In a large pot, brown the ground beef over medium heat, breaking it into small crumbles. Drain any excess fat.
Add the chopped onion and minced garlic to the pot and sauté until softened (about 3-5 minutes).
Stir in the broth and diced potatoes. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
Stir in the milk or cream, followed by the shredded cheddar cheese. Stir until the cheese is melted and smooth.
Taste the soup and adjust the seasoning with salt, pepper, thyme, and parsley. Serve hot.
