Chicken and Rice Soup

Ingredients
  

  • 1/4 cup butter
  • 1 T extra virgin olive oil
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup sliced carrots
  • 1/2 cup chopped celery
  • 1/4 cup all-purpose flour
  • 8 cups chicken broth
  • 3 cups cooked rice
  • 1 cup cooked chicken
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 6 slices bacon, cooked and crumbled Optional

Instructions
 

  • In a large pot or Dutch oven, melt butter over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  • Stir in flour and cook for 1 minute.
  • Gradually whisk in chicken broth until smooth.
  • Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Stir in cooked rice and chicken. Season with salt and pepper.
  • Simmer for another 5-10 minutes to heat through.
  • Serve hot, garnished with crumbled bacon (optional).
