Instructions
In a large pot or Dutch oven, melt butter over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
Stir in flour and cook for 1 minute.
Gradually whisk in chicken broth until smooth.
Bring to a boil, then reduce heat and simmer for 15 minutes.
Stir in cooked rice and chicken. Season with salt and pepper.
Simmer for another 5-10 minutes to heat through.
Serve hot, garnished with crumbled bacon (optional).
