Chicken Paprikash Soup

Ingredients
  

  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons sweet paprika
  • 1 teaspoon smoked paprika
  • 4 cups chicken broth
  • 1 pound chicken cooked and shredded
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh parsley
  • 1 cup egg noodles

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  • Stir in sweet paprika and smoked paprika and cook for 1 minute.
  • Pour in chicken broth and bring to a boil. Add egg noodles and cook until tender, about 8-10 minutes.
  • Stir in shredded chicken and heat through.
  • Remove from heat and stir in sour cream. Garnish with parsley and serve.
