Instructions
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
Add shredded chicken and rice to the pot. Cook for 2 minutes, stirring occasionally.
Pour in chicken broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until rice is tender.
Garnish with chopped parsley before serving.
