Chicken Rice Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cups cooked chicken, shredded
  • 1/2 cup uncooked rice
  • 6 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped parsley for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add shredded chicken and rice to the pot. Cook for 2 minutes, stirring occasionally.
  • Pour in chicken broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until rice is tender.
  • Garnish with chopped parsley before serving.
