Chicken Tortilla Soup

Ingredients
  

  • 1 lb chicken breasts can be frozen
  • 8 cups chicken broth
  • 1 can crushed tomatoes 14.5 oz
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste salt
  • to taste pepper
  • as needed tortilla strips for garnish
  • as needed sour cream for garnish
  • as needed cilantro for garnish
  • as needed cheese for garnish

Instructions
 

  • Place chicken breasts, chicken broth, crushed tomatoes, garlic powder, cumin, chili powder, salt, and pepper in the Instant Pot.
  • Close the Instant Pot lid and set it to cook on manual high pressure for 30 minutes.
  • Once the cooking cycle is complete, perform a quick release to release the pressure.
  • Remove the cooked chicken breasts from the Instant Pot and shred them using two forks.
  • Return the shredded chicken to the soup in the Instant Pot.
  • Serve the Chicken Tortilla Soup hot, garnished with tortilla strips, sour cream, cilantro, and cheese.
