Chicken Tortilla Soup

Ingredients
  

  • 2 tablespoons olive oil
  • 1 onion onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes, 14.5 oz
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 pound cooked chicken, shredded
  • 1 can black beans, rinsed and drained
  • 1/2 cup corn, frozen or canned
  • 1/4 cup cilantro, chopped
  • To taste salt and pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for 1 minute more.
  • Pour in chicken broth, diced tomatoes, cumin, and chili powder. Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Stir in shredded chicken, black beans, and corn. Simmer for another 5 minutes.
  • Season with salt and pepper to taste.
  • Garnish with cilantro before serving.
