Chicken Tortilla Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 14.5 ounce diced tomatoes undrained
  • 4 ounce green chilies diced
  • 6 cups chicken broth
  • 2 cups cooked chicken shredded
  • 6 tortillas corn or flour cut into strips
  • to taste salt and pepper

Instructions
 

  • Heat olive oil in a stock pot or Dutch oven over medium heat.
  • Add the onion and garlic and cook until softened, about 2-3 minutes.
  • Stir in the chili powder, cumin and paprika and cook another 1-2 minutes.
  • Pour in the diced tomatoes, green chilies and chicken broth, then add the chicken.
  • Bring to a boil, then simmer for 7-10 minutes.
  • Season with salt and pepper to taste.
  • Serve topped with tortilla strips.
