Chilled Avocado and Zucchini Soup

Ingredients
  

  • 2 medium zucchinis chopped
  • 1/4 cup green onions sliced
  • 14 ounces chicken broth
  • 2 tablespoons lime juice
  • 1 medium avocado diced
  • 1/8 teaspoon cumin
  • 1/4 teaspoon sea salt
  • 3/4 cup goat or coconut kefir

Instructions
 

  • Combine zucchini, green onions, and chicken broth in a pot and bring to a boil. Reduce heat and simmer for 10 minutes, or until zucchini is tender.
  • Transfer the mixture to a blender. Add lime juice, avocado, cumin, salt, and kefir.
  • Blend until smooth.
  • Chill for at least 2 hours before serving.
