Ingredients
  

  • 3 medium avocados ripe
  • 1/2 cup vegetable broth
  • 1/4 cup lime juice freshly squeezed
  • 1 tablespoon olive oil
  • 1/4 cup chopped cilantro plus more for garnish
  • 1 small jalapeƱo seeded and minced (optional)
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste

Instructions
 

  • Combine all ingredients in a blender and blend until smooth and creamy.
  • Taste and adjust seasoning as needed.
  • Chill for at least 30 minutes before serving.
  • Garnish with additional cilantro and a drizzle of olive oil.
