Coconut Tuscan Soup

Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic minced
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound Italian sausage
  • 1.5 pounds potatoes diced
  • 1 bunch kale chopped
  • 32 oz vegetable broth
  • 13 oz unsweetened coconut milk
  • to taste parmesan cheese for serving
  • to taste red pepper flakes for serving
  • to taste fresh parsley chopped, for serving

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and cook until softened, about 2-3 minutes.
  • Stir in smoked paprika, garlic, basil, oregano, salt, and pepper.
  • Add sausage and cook until browned.
  • Add potatoes, kale, and vegetable broth. Bring to a simmer.
  • Cover and cook until potatoes are tender, about 25 minutes.
  • Stir in coconut milk and parmesan cheese. Cover and cook for another 15-20 minutes.
  • Serve with extra parmesan cheese, red pepper flakes, and fresh parsley.
