Heat olive oil in a large pot over medium heat.
Add onion and cook until softened, about 2-3 minutes.
Stir in smoked paprika, garlic, basil, oregano, salt, and pepper.
Add sausage and cook until browned.
Add potatoes, kale, and vegetable broth. Bring to a simmer.
Cover and cook until potatoes are tender, about 25 minutes.
Stir in coconut milk and parmesan cheese. Cover and cook for another 15-20 minutes.
Serve with extra parmesan cheese, red pepper flakes, and fresh parsley.
