Cold Bisque of Shrimp Soup

Ingredients
  

  • 2 lbs Shrimp Peeled and deveined
  • 1 cup Dry Sherry
  • 4 cups Fish Stock
  • 1 cup Heavy Cream
  • 1 small Onion Chopped
  • 2 tbsp Butter
  • 1/4 tsp Cayenne Pepper
  • Salt to taste Salt
  • Pepper to taste Pepper
  • Chives for garnish Chives Chopped

Instructions
 

  • Sauté the chopped onion in butter until softened.
  • Add the shrimp and cook until pink.
  • Add the fish stock, sherry, and cayenne pepper. Bring to a simmer.
  • Blend the soup until smooth using an immersion blender or regular blender.
  • Stir in the heavy cream.
  • Season with salt and pepper to taste.
  • Chill the soup before serving.
  • Garnish with chopped chives.
