Instructions
Press cloves into whole onion; set aside.
In a large stockpot, combine remaining ingredients except parsley; add onion with cloves.
Bring to a boil; reduce heat, cover and simmer for 45 minutes, stirring occasionally.
Discard onion with cloves and bay leaf.
Remove ham hocks, if using; dice meat and return to soup. Stir in parsley.
