crawfish tails

Instructions
Melt butter in a large pot over medium heat. Add onion, celery, and carrot and cook until softened, about 5-7 minutes.
Stir in flour and cook for 1 minute.
Gradually whisk in fish stock and bring to a boil. Reduce heat and simmer for 20 minutes.
Add crawfish tails and cook for 5 minutes.
Stir in heavy cream and lemon juice. Season with salt and cayenne pepper to taste.
Serve immediately, garnished with chopped parsley.
