Cream-less Tomato Basil Soup

Ingredients
  

  • 3 cans Low-Sodium Diced Tomatoes 14.5 oz cans
  • 1 can Low-Sodium Diced Tomatoes 14.5 oz can
  • 1 tablespoon Olive Oil Basil infused is preferred
  • 1 small Onion diced
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1/2 cup Fresh Basil chopped
  • Salt to taste Salt
  • Pepper to taste Pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for 1 minute more.
  • Add diced tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Stir in fresh basil, salt, and pepper.
  • Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend until smooth.
  • Serve warm.
