Cream of Asparagus Soup

Ingredients
  

  • 1 kg asparagus
  • 4 cups vegetable stock
  • 1/2 cup heavy cream
  • 2 tbsp butter
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • salt to taste salt
  • pepper to taste pepper

Instructions
 

  • Melt butter in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for 1 minute more.
  • Add asparagus and vegetable stock to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until asparagus is tender.
  • Carefully blend the soup using an immersion blender or transfer to a regular blender. Blend until smooth and creamy.
  • Stir in heavy cream and season with salt and pepper to taste.
  • Serve hot.
