Cream of Broccoli Soup

Ingredients
  

  • 2 tbsp grass-fed butter
  • 1 medium onion peeled and chopped
  • 4 cups vegetable stock or chicken stock or water
  • 2 heads broccoli florets and stems (cut into chunks)
  • 3 cloves garlic peeled
  • 1 medium potato diced
  • 1 tsp sea salt
  • to taste black pepper freshly ground

Instructions
 

  • Sauté onion and butter in a soup pot until onion wilts.
  • Add stock, broccoli, garlic, potato, and salt.
  • Bring to a boil.
  • Cover and reduce heat to simmer for 10-15 minutes.
  • Remove vegetables from the pot and puree in a food processor or blender.
  • Add back to liquid and adjust seasoning if needed.
