grass-fed butter

onion
peeled and chopped

vegetable stock
or chicken stock or water

heads
broccoli
florets and stems (cut into chunks)

cloves
garlic
peeled

potato
diced

tsp
sea salt
to taste
black pepper
freshly ground
Instructions
Sauté onion and butter in a soup pot until onion wilts.
Add stock, broccoli, garlic, potato, and salt.
Bring to a boil.
Cover and reduce heat to simmer for 10-15 minutes.
Remove vegetables from the pot and puree in a food processor or blender.
Add back to liquid and adjust seasoning if needed.
