Cream of Chicken and Wild Rice Soup

Ingredients
  

  • 5 cups water
  • 4-5 breasts chicken
  • 1/2 large onion chopped
  • 2 tsp garlic chopped
  • 4 T butter
  • 1 box wild rice blend
  • 12 oz heavy cream
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions
 

  • Bring 5 cups of water to a boil. Add chicken breasts and cook until done (about 20-25 minutes). Remove chicken and shred or dice.
  • In a large pot or Dutch oven, melt butter over medium heat. Add chopped onion and cook until softened (about 5 minutes).
  • Add wild rice blend to the pot and cook for 5 minutes, stirring occasionally.
  • Add the cooked chicken to the pot.
  • Pour in heavy cream, salt, and pepper. Bring to a simmer and cook for 10-15 minutes, stirring occasionally, until the soup has thickened.
  • Serve hot and enjoy!
