Instructions
Bring 5 cups of water to a boil. Add chicken breasts and cook until done (about 20-25 minutes). Remove chicken and shred or dice.
In a large pot or Dutch oven, melt butter over medium heat. Add chopped onion and cook until softened (about 5 minutes).
Add wild rice blend to the pot and cook for 5 minutes, stirring occasionally.
Add the cooked chicken to the pot.
Pour in heavy cream, salt, and pepper. Bring to a simmer and cook for 10-15 minutes, stirring occasionally, until the soup has thickened.
Serve hot and enjoy!
