Cream of Mushroom Soup

Ingredients
  

  • 1 tablespoon butter
  • 8 ounces cremini mushrooms, sliced
  • 1/4 cup onion, diced
  • 1/4 cup all-purpose flour
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste

Instructions
 

  • Melt butter in a large pot or Dutch oven over medium heat.
  • Add mushrooms and onion and cook until softened, about 5-7 minutes.
  • Stir in flour and cook for 1 minute.
  • Gradually whisk in vegetable broth until smooth.
  • Bring to a simmer and cook until thickened, about 5 minutes.
  • Stir in heavy cream, salt, and pepper. Simmer for another 2-3 minutes.
  • Remove from heat and enjoy.
