Instructions
Melt butter in a large pot or Dutch oven over medium heat.
Add mushrooms and onion and cook until softened, about 5-7 minutes.
Stir in flour and cook for 1 minute.
Gradually whisk in vegetable broth until smooth.
Bring to a simmer and cook until thickened, about 5 minutes.
Stir in heavy cream, salt, and pepper. Simmer for another 2-3 minutes.
Remove from heat and enjoy.
