Creamy Cajun Shrimp Soup with a Kick

Ingredients
  

  • 2 tablespoons Olive oil
  • 1 cup Diced onion
  • 1 cup Diced celery
  • 1 cup Diced green bell pepper
  • 2 cloves Garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon Paprika
  • 1/4 teaspoon Cayenne pepper (optional)
  • 4 cups Chicken broth
  • 1 can Diced tomatoes, undrained
  • 1 cup Heavy cream
  • 1 pound Shrimp, peeled and deveined
  • 1/4 cup Chopped fresh parsley
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, celery, and bell pepper and cook until softened, about 5-7 minutes.
  • Add garlic, Cajun seasoning, paprika, and cayenne pepper (if using) and cook for 1 minute more.
  • Pour in chicken broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Stir in heavy cream and bring to a gentle simmer.
  • Add shrimp and cook until pink and opaque, about 3-5 minutes.
  • Stir in chopped parsley. Season with salt and pepper to taste.
  • Serve hot.
