Instructions
Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, celery, and bell pepper and cook until softened, about 5-7 minutes.
Add garlic, Cajun seasoning, paprika, and cayenne pepper (if using) and cook for 1 minute more.
Pour in chicken broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 15 minutes.
Stir in heavy cream and bring to a gentle simmer.
Add shrimp and cook until pink and opaque, about 3-5 minutes.
Stir in chopped parsley. Season with salt and pepper to taste.
Serve hot.
