Creamy Carrot Ginger Soup

Ingredients
  

  • 15 ounce carrots raw
  • 3 cups chicken broth low sodium
  • 1 medium onion chopped
  • 1 Tbsp butter salted
  • 3 tsp ginger root
  • 2 tbsp cream cheese low fat
  • ½ tsp black pepper

Instructions
 

  • In a large pot, melt butter over medium heat.
  • Add chopped onion and cook for 5-6 minutes.
  • Add chopped ginger, broth and carrots
  • Bring to a boil on high heat; cover and lower heat to simmer for 30 minutes.
  • Add the cream cheese and blend with an immersion blender.
  • Remove from heat and season with salt and pepper to taste.
