Creamy Chicken Gnocchi Soup

Ingredients
  

  • 2 tablespoons Butter
  • 1 pinch Onion Powder
  • 1 pinch Garlic Powder
  • 1/8 teaspoon Dried Basil
  • 1/4 teaspoon Herbs de Provence
  • 1/4 teaspoon Black Pepper
  • 1/4 teaspoon Salt
  • 1/2 cup Heavy Cream
  • 1/2 cup Milk
  • 1/2 teaspoon Cream Cheese
  • 3/4 cup Vegetable Broth
  • 1 cup Cooked Chicken Shredded or diced
  • 2 1/2 cups Gnocchi
  • 1/2 cup Parmesan Cheese Grated
  • 1/8 cup Havarti Cheese Grated
  • 1 1/2 cups Spinach

Instructions
 

  • Precook the gnocchi, defrost and chop the chicken, and wash the spinach.
  • Melt butter in a large pot over medium heat. Add onion powder, garlic powder, dried basil, Herbs de Provence, black pepper, and salt.
  • Add heavy cream and milk to the pot and heat until simmering.
  • Stir in cream cheese until melted.
  • Add vegetable broth, chicken, and gnocchi. Bring to a simmer and cook until gnocchi is tender.
  • Stir in Parmesan cheese and Havarti cheese until melted.
  • Add spinach and cook until wilted.
  • Season with salt and pepper to taste. Serve immediately.
