mint, parsley, lemon juice, sour cream, bacon bits, or croutons for garnish
Instructions
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and garlic, sauté until softened.
Add the diced potatoes and vegetable broth, bring to a boil.
Reduce heat and simmer until potatoes are tender, about 15 minutes.
Add the green peas and cook for an additional 5 minutes.
Blend the soup until smooth using an immersion blender or in batches in a blender.
Season with salt and pepper to taste.
Serve hot, garnished with fresh herbs, a splash of lemon juice, sour cream, bacon bits, or croutons if desired.
