Creamy Green Pea Soup

Ingredients
  

  • 4 cups green peas fresh or frozen
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 2 medium potatoes peeled and diced
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • optional Fresh herbs mint, parsley, lemon juice, sour cream, bacon bits, or croutons for garnish

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and garlic, sauté until softened.
  • Add the diced potatoes and vegetable broth, bring to a boil.
  • Reduce heat and simmer until potatoes are tender, about 15 minutes.
  • Add the green peas and cook for an additional 5 minutes.
  • Blend the soup until smooth using an immersion blender or in batches in a blender.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh herbs, a splash of lemon juice, sour cream, bacon bits, or croutons if desired.
