Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion yellow onion, chopped
  • 2 cups vegetable broth
  • 1 cup heavy cream Optional, for extra creaminess
  • 1 teaspoon salt Or to taste
  • 1/2 teaspoon black pepper Or to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until softened, about 5 minutes.
  • Pour in vegetable broth and bring to a simmer.
  • Reduce heat and simmer for 15 minutes.
  • If desired, stir in heavy cream for a richer flavor.
  • Season with salt and pepper to taste.
