Creamy Mushroom Soup

Ingredients
  

  • 4 tablespoons Butter
  • 1 medium Onion chopped
  • 24 ounces Mushrooms sliced
  • 4 cups Chicken Broth
  • 1 cup Heavy Cream or Half and Half
  • 2 teaspoons Thyme fresh or dried
  • 1/2 teaspoon Salt or to taste
  • 1/4 teaspoon Black Pepper or to taste
  • 2 bouillon cubes Chicken optional

Instructions
 

  • Melt butter in a large pot or Dutch oven over medium heat.
  • Add chopped onion and cook until softened, about 5 minutes.
  • Add sliced mushrooms and cook until browned and softened, about 8-10 minutes.
  • Pour in chicken broth and add thyme, salt, and pepper. Bring to a simmer.
  • Reduce heat to low and simmer for 15 minutes to allow flavors to meld.
  • Stir in heavy cream or half and half. Heat through, but do not boil.
  • Adjust seasoning to taste. Garnish with fresh parsley and thyme, if desired.
  • Serve warm and enjoy!
