Instructions
Melt butter in a large pot or Dutch oven over medium heat.
Add chopped onion and cook until softened, about 5 minutes.
Add sliced mushrooms and cook until browned and softened, about 8-10 minutes.
Pour in chicken broth and add thyme, salt, and pepper. Bring to a simmer.
Reduce heat to low and simmer for 15 minutes to allow flavors to meld.
Stir in heavy cream or half and half. Heat through, but do not boil.
Adjust seasoning to taste. Garnish with fresh parsley and thyme, if desired.
Serve warm and enjoy!
