Creamy Mushroom Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 8 ounces mushrooms sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 4 cups vegetable broth
  • 1 teaspoon soy sauce
  • 1/2 teaspoon thyme
  • 1/2 cup heavy cream

Instructions
 

  • Heat olive oil in a soup pot over medium heat. Add mushrooms, salt, and pepper. Sauté until mushrooms release moisture and brown.
  • Add butter and flour to the pot. Cook for 2 minutes, stirring constantly.
  • Slowly pour in vegetable broth, stirring to dissolve the flour. Add soy sauce and thyme. Bring to a simmer and cook until thickened.
  • Stir in heavy cream and heat through. Season with salt and pepper to taste.
