Instructions
Heat olive oil in a soup pot over medium heat. Add mushrooms, salt, and pepper. Sauté until mushrooms release moisture and brown.
Add butter and flour to the pot. Cook for 2 minutes, stirring constantly.
Slowly pour in vegetable broth, stirring to dissolve the flour. Add soy sauce and thyme. Bring to a simmer and cook until thickened.
Stir in heavy cream and heat through. Season with salt and pepper to taste.
