Creamy Sausage Potato Soup
Ingredients
- 1 tablespoon butter
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 cup potatoes, diced
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 teaspoon paprika
- 0.25 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 pound sausage
Instructions
- With your Instant Pot on the sear/sauté setting, add butter, carrots and celery. Cook for a few minutes stirring occasionally. Add potatoes, onions and garlic and cook for another couple minutes.
- Turn your Instant Pot to slow cook setting and add remaining ingredients and stir to combine.
- Cook low on "Slow Cook" for 4 hours.
- Allow the soup to cool a bit before serving.
