Creamy Seafood Soup

Ingredients
  

  • 2 tablespoons butter
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fish stock
  • 1 cup heavy cream
  • 1 pound seafood mix (shrimp, scallops, cod) or your favorite seafood
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper optional

Instructions
 

  • Melt butter in a large pot over medium heat.
  • Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for 1 minute more.
  • Pour in fish stock and bring to a simmer.
  • Stir in heavy cream.
  • Add seafood and cook until opaque, about 5-7 minutes.
  • Season with salt, pepper, and cayenne pepper (if using).
  • Serve hot.
