Creamy Superfood Soup

Ingredients
  

  • 2 tbsp pine nuts
  • 1 shallot chopped
  • 2 cloves garlic minced
  • 1 jicama peeled and chopped
  • 2 carrots peeled and chopped
  • 1 sweet potato peeled and chopped
  • 2 tomatoes chopped
  • 1 yellow bell pepper chopped
  • 6 cups veggie stock salted
  • 1 tsp paprika
  • 1/2 tsp chilli flakes
  • 1/4 cup fresh dill chopped, plus extra for garnish
  • 2 tbsp olive oil plus extra for garnish

Instructions
 

  • Heat olive oil in a saucepan over medium heat. Add pine nuts, shallot, garlic, jicama, carrots, sweet potato, tomatoes, and bell pepper. Sauté until slightly golden brown.
  • Add veggie stock, ensuring it covers the vegetables. Bring to a simmer and cook for 30 minutes, or until the vegetables are softened.
  • Use a hand blender to blend the soup until smooth.
  • Continue to cook for another 10 minutes to ensure everything is well combined.
  • Drizzle with olive oil and garnish with fresh dill before serving.
