Instructions
Heat olive oil in a saucepan over medium heat. Add pine nuts, shallot, garlic, jicama, carrots, sweet potato, tomatoes, and bell pepper. Sauté until slightly golden brown.
Add veggie stock, ensuring it covers the vegetables. Bring to a simmer and cook for 30 minutes, or until the vegetables are softened.
Use a hand blender to blend the soup until smooth.
Continue to cook for another 10 minutes to ensure everything is well combined.
Drizzle with olive oil and garnish with fresh dill before serving.
