Creamy Tomato Soup

Ingredients
  

  • 10-12 medium tomatoes
  • 4 cloves garlic
  • 1 medium carrot
  • 2 stalks celery
  • 1 medium onion
  • 5-6 leaves basil
  • 1 teaspoon sugar
  • 1 teaspoon butter
  • 1/2 teaspoon oil
  • to taste salt and pepper

Instructions
 

  • Cut tomatoes into quarters
  • Peel and finely chop garlic
  • Peel and cut carrots
  • Cut celery
  • Peel and slice onion
  • Cut basil leaves into strips and set aside
  • Slowly heat oil and butter over low heat in a pan
  • Add sliced onions and saute until translucent
  • Add the chopped garlic and celery, stirring occasionally
  • Add carrots and tomatoes.
  • Stir on medium-high heat for 3 minutes
  • Add 4 cups of water
  • Bring to a boil
  • Cover and simmer on low heat for 15 minutes
  • Remove from heat
  • Blend until smooth
  • Strain into separate pot
  • Return to a boil
  • Stir in basil and garnish
  • Serve hot
