Instructions
Cut tomatoes into quarters
Peel and finely chop garlic
Peel and cut carrots
Cut celery
Peel and slice onion
Cut basil leaves into strips and set aside
Slowly heat oil and butter over low heat in a pan
Add sliced onions and saute until translucent
Add the chopped garlic and celery, stirring occasionally
Add carrots and tomatoes.
Stir on medium-high heat for 3 minutes
Add 4 cups of water
Bring to a boil
Cover and simmer on low heat for 15 minutes
Remove from heat
Blend until smooth
Strain into separate pot
Return to a boil
Stir in basil and garnish
Serve hot
